Tracking Sales, Profits, and Customers: A Report on a Promotional Campaign |
|
Interview with Marie Esperella, Manager
"Couldn't be happier with it. I'd like to see this promo run up until the November holiday specials start, and run it again next summer. Families love it because the kids will eat the wings while the adults can get their own appetizer and they haven't wasted five bucks on a plate of stuffed mushrooms the kids won't touch. Families who might not normally order an appetizer feel like they can when it's this cheap, and that makes the kids happier because they don't have to wait for their food. So the adults are in a better mood too. Make sure you talk to Amy because she has really led the way in increasing table tickets with this promo."
Interview with Amy Kwan, Waitress
"Some tables really keep you hopping, especially at lunch, with all the baskets going back and forth. They'll order two or three sometimes. But then your section is always full and you can often talk people into ordering things they might not usually get. Like, if there's a woman at the table I try to point out the salads as a sort of balance to the fried wings. And after the kids stuff themselves on wings I suggest that their parents get them some strawberry shortcake for dessert, because the berries are nice and fresh and full of vitamin C. Then the parents usually get dessert too. So my totals are up pretty significantly with this promo."
