     Have you ever considered what you are actually eating when you bite into cheese? Hard cheese, such as cheddar, relies on mold for its flavor. As hard cheese matures, mold grows on the outside surface and acts as a barrier so that gases and moisture can escape but air cannot sneak into the cheese. As the gases and moisture leave, the cheese becomes dense, and the flavor becomes concentrated. Without the help of a layer of mold, cheddar cheese would remain soft, moist, and flavorless.
